Simple Vietnamese beef noodle recipe

Ingredients

  • 1.5 kg beef bones (bucket, tube, or whole)
  • 500g beef (dried, fried, lightly rolled…)
  • 1 fresh ginger root
  • 2 onions
  • 4-5 purple onions
  • 1 bunch of coriander
  • 1 bunch of green onions
  • Spices: salt, rock sugar, fish sauce, ground pepper, star anise, cardamom, cinnamon, cloves
  • Fresh pho noodles
  • Raw vegetables served with: bean sprouts, basil, coriander, ash,…
  • Lemon, chili, black sauce, chili sauce

Instructions

1. Preparing Ingredients:

  • Wash beef bones and blanch in boiling water to remove odors.
  • Wash the beef, slice it thinly or roll it up (depending on your preference).
  • Grill ginger, onions, and purple onions until fragrant.
  • Wash coriander and green onions and cut them into small pieces.
  • Wash bean sprouts, basil, coriander, and ash.

2. Cook the broth:

  • Put the beef bones in the pot, pour water to cover.
  • Boil and skim the foam regularly to keep the broth clear.
  • Reduce heat to low, simmer the bones for 2-3 hours until the broth is sweet.
  • Blanch the beef in the pot until firm, then remove and drain.
  • Add spices: salt, rock sugar, fish sauce, ground pepper, star anise, cardamom, cinnamon, cloves into the broth pot.
  • Add ginger, onions, and grilled purple onions to the pot, stew for another 30 minutes.

3. Completion:

  • Blanch the pho noodles in boiling water, then place them in a bowl.
  • Arrange beef and herbs on top of pho noodles.
  • Pour hot broth into the bowl.
  • Serve with lemon, chili, hoisin sauce, chili sauce, and raw vegetables.

Notes

  • Choose fresh beef bones to make the broth sweet.
  • Stew beef bones over low heat to keep the broth clear and not cloudy.
  • You can add ginger, onions, and grilled purple onions to enhance the flavor of the broth.
  • Season to taste, avoiding overly salty or sweet.
